
Cheese and Bacon Batch Rolls
There’s nothing quite like the comforting aroma of freshly baked rolls, especially when they’re filled with smoky bacon and golden, melted cheese. These hearty cheese and bacon batch rolls are a firm family favourite - ideal for sharing, perfect for picnics, and just the thing alongside a bowl of soup or a ploughman's lunch. Best served fresh from the oven, but they’re just as lovely sliced and buttered the next day - if there are any left!
Ingredients
- 250g Wessex Mill Strong White Bread Flour
- 1 tsp quick yeast
- ½ tsp sugar
- 175ml tepid milk
- ½ tsp salt
- 150g bacon
- 100g cheddar cheese
- plus oil, for tray
Equipment
- 1 x 20cm/8 inch square baking tray
- 2 x mixing bowls
- 1 x small pan
Method
220˚C, Fan 200˚C, 425˚F, Gas 7

Put the flour, yeast and sugar into a large bowl and blend them together.

Pour in the milk and stir until everything looks craggy and lumpy, then add the salt and bring into a slightly sticky, doughy, mass.

Using your hands, gather everything together and knead the dough for 2 minutes dusting lightly with flour.

Cover the dough bowl with an upturned bowl and leave it in a warm place for the dough to double in size, which will take about an hour.

Dice the bacon into very small pieces, put them in a small pan, cover and cook over a gentle heat and cook until the bacon is translucent. Remove from the heat and leave to cool.

Chop the cheddar into 7mm/¼ inch cubes.

Rub some oil around the inside of a 20cm/8” inch square baking tray or insert a baking liner.

Flatten the dough and tip the cooled bacon and bacon fat onto the dough.

Scatter the cheese cubes onto the dough.

Knead the dough for two minutes, incorporating the cheese and bacon.

Cut the dough into 9 equal pieces and roll each into a ball.

Transfer the dough balls to the baking tray, making three rows of three dough pieces.

Cover loosely with an upturned bowl or clean tea towel. Leave them to rise in a warm place to double in size, about an hour.

Preheat the oven.

Bake for 30 minutes.

Transfer the rolls to a wire rack.
