Very Easy Christmas Pudding

A very easy Christmas pudding. perfect for all festive gatherings. You could swap brandy for the spiced rum. This delicious pudding can be ready to serve in under an hour from start to finish.

Ingredients

  • 125g butter
  • 100g brown sugar
  • 100g raisins
  • 100g sultanas
  • 100g currants
  • 50g mixed peel
  • 1 orange, rind and juice
  • ½ tsp bicarbonate of soda
  • 100g apples, grated
  • 3 tbsp rum or fruit juice
  • 150g Wessex Mill Self Raising Flour
  • 1 tbsp cocoa
  • 1 tsp cinnamon
  • 2 eggs

Equipment

  • 1 x saucepan
  • 1 x mixing bowl
  • 1 x 1.2lt/2-pint pudding bowl

Method

  • Measure the butter, sugar, raisins, sultanas, currants and mixed peel into a medium size saucepan.

  • Finely grate the orange into the pan, squeeze and add the orange juice.

  • Put the pan over a gentle heat for 5 minutes, stirring occasionally.

  • Remove the pan from the heat, add in the bicarbonate of soda, stir and leave for 10 minutes.

  • Coarsely grate the apple into the saucepan, spoon in the rum or fruit juice and stir again.

  • Measure the flour, cocoa and cinnamon into a bowl, sift this into the saucepan and stir until combined.

  • Break the eggs into the pan and mix thoroughly.

  • Rub some butter around the inside of a 1.2lt/2pint pudding bowl, tip the mixture into the bowl and smooth the top.

  • Cover the bowl with cling film, cut a hole in the top and microwave on 400w low power for 15 minutes.

  • Leave to stand for 10 minutes.

  • Microwave again on 400w low power for 15 minutes.

  • Rest for 2 minutes before serving OR leave to cool completely and reheat for 3 minutes at 900w, loosely cover with cling film.

  • To serve, remove the cling film and run a warm knife around the edge of the pudding.

  • Put a warm plate on top of the pudding basin, carefully invert the bowl and plate so that the pudding slides onto the plate.
